How to sharpen with newspaper

  1. Place the newspaper on a hard surface such as a cutting board.
  2. Place the knife blade on the newspaper with the blade facing you.
  3. With the sharp edge of the knife at a 15 degree angle, slide the blade from one side to the other.
  4. Apply force to the blade and sharpen firmly about 10 times until you hear a friction sound.
  5. Repeat the same number of times on the other side of the knife.

    I have had an absolutely awful bread knife for over 40 years, figuring that bread knives were never that great and that they all resulted in roughly sliced bread and a huge pile of crumbs. For the past year I have been grumbling about it but never took action, so I don’t know what made me decide to order this one last week, but I am so glad that I did! A spur of the moment splurge resulted in an absolute epiphany – Holy Cow, I had no idea that bread knives could be this sharp, or that slices could be smooth surfaced, and where are all the crumbs?!? I was so taken with it that when I was ready to carve last night’s pork roast, I used … the bread knife! The slices were clean, with very minimal tearing, even though the roast was very, very tender, and ready to fall apart. Mind you, I have an excellent knife sharpener (electric) and I keep my knives sharp. But the combination of the serrations and the blade design of this knife is far superior to any I have used in the past. It is also a beautiful knife, with the tang being visibly incorporated into the handle, and the wood used is exquisite. I love it so much that I have just ordered an 8-inch chef’s knife to match, which should arrive today.

    I genuinely never thought I’d own a knife this lovely, let alone an artisanal one. (You watch enough episodes of “The Mark of Beauty”…) I’m practically afraid to touch it, except that it’s the best thing for miles around where crusty bread is concerned.Fit and finish are astounding. The wooden handle has been polished and lacquered as smooth and glossy as the steel. The blade is super sharp, which ironically means I probably won’t slice open my palm yet again trying to get through bottom crust on a new loaf. I don’t know enough to say more here, but this is the bread knife I’d take with me in a crisis.You know. For… crisis bread. Work with me here.This knife should last forever with care and maintenance, and I intend to cherish it. There’s a whetstone from another prefecture here, and I hope I can use it appropriately.

    I had a Henckels ‘Classic Bread Knife’ for many years that was ruined by a sharpening service, so I picked up this NAGOMI as a replacement.The build quality is good – it’s a gorgeous-looking knife with a lovely “pakka wood” handle, which is made of layers of hardwood and resin. It feels great in the hand. It’s a “full tang” knife – the blade extends the entire length of the knife, to the end of the handle. This gives it good balance in your hand. It’s a little heavier than typical Japanese knives – it weighs the same as my Henckels.The price is about twice that of the Henckels, which may not be worth it to some people, but it definitely has it beat aesthetically (see my pic).It comes in a nice presentation box that would work well for gifting.
